Pohutukawa Cake

If you are not familiar with the Pohutukawa flower you are probably not from New Zealand. So I'll just quickly explain, it's a very Kiwi tree and you'll see it at beaches and if you're lucky (like me) in your backyard!

My friend's work asked me to make a two tier cake for their new office opening near the airport in Auckland. They were giving each of the staff members a Pohutukawa mug so they asked for a matching cake with a plane flying over top.

I originally wanted to paint the Pohutukawa on the fondant but when it came to it the fondant was dried out and the colouring looked bad when it was painted on so I had to make the flowers out of fondant.
